Banana Bread Muffins

About a week ago, our lovely banana tree gave us a big surprise: a giant bunch of bananas! They were really great and perfectly sweetened and ripened. I'm actually not very sure if they were indeed bananas or plantains, since they were kind of shorter than the bananas we usually buy. There were even these reaaaaaally small mini bananas that were attached to the normal sized ones and they were the cutest things I have ever seen. 

  Nevertheless, we had waay too many bananas/plantains than we knew what to do with. So when we ate bananas until we went bananas, I saved the last few for.. banana bread! 

This time I made them into muffins instead of one big bread loaf just because they are easier to take on the go for my family and I. Also, having them all separate means I can put different toppings for everyone! My dad likes his to have 99% raisins and 1% banana bread... and I'm not gonna torture everyone else into eating that. 

Some of the different toppings I put were: Craisins, raisins, chopped dates, coconut shreds, brown sugar, dried blueberries. 

They turned out super moist and banana-y. Just how we like it. Keep reading for the recipe!







Banana Bread Recipe

(makes 12 muffins or 1 loaf)

Ingredients:

  • 3 ripe bananas
  • 1/2 cup white granulated sugar
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup flour
  • 1/3 cup vegetable oil
  • toppings of choice such as shredded coconut, raisins, craisins, dried fruits, chocolate chips, etc.

Preparation:

  1. Pre-heat oven to 375 degrees F.
  2. In a large bowl, mash the bananas with the paddle attachment of a stand mixer or just a spatula or fork.
  3. Add sugar and eggs to the mashed bananas and mix until combined. 
  4. Add in the vegetable oil and mix until combined.
  5. In a separate bowl, combine all the dry ingredients until they are evenly mixed, and add it to the wet mixture.
  6. Gently mix everything together until just combined. It should be a thick batter consistency with some lumps of banana. 
  7. Divide batter into the muffin/cupcake tin or into a loaf pan. Make sure to properly grease whatever you are placing the batter into. If using a cupcake tin, you don't have to grease it if you are using cupcake wrappers.  
  8. Top with whatever you want! Brown sugar is a great topping because it caramelizes in the oven and becomes crunchy like a streusel.
  9. Bake in the oven for 20 minutes at 375 F!
