Weeknight Dinner: Coconut Lime Mahi Mahi

Happy Thursday! Coconut Lime Mahi Mahi Today, I sat through my graphic design class that i only have once a week, and although it was sooo long, it was definitely very interesting and got all my creative juices flowing. When I got home, I knew we needed a healthier dinner to make up for all the sitting on the computer, so I just popped out some beautiful Mahi Mahi fillets from the freezer that we recently got from Costco!  These fillets are fairly large and thick, so only two pieces was enough for our family of four. I let them thaw out for around two hours until they were fairly soft and squishy.  When it was time for me to start preparing, I first made the breading mix out of some sweetened shredded coconut, panko breadcrumbs, flour, and salt & pepper. In a separate shallow bowl, I poured out a small amount of milk to act as an adhesive for the breading before I pan-fried the fish.  Next, I made a few cups of couscous with some caramelized onio
