Weeknight Dinner: Coconut Lime Mahi Mahi

Today, I sat through my graphic design class that i only have once a week, and although it was sooo long, it was definitely very interesting and got all my creative juices flowing.
When I got home, I knew we needed a healthier dinner to make up for all the sitting on the computer, so I just popped out some beautiful Mahi Mahi fillets from the freezer that we recently got from Costco!
These fillets are fairly large and thick, so only two pieces was enough for our family of four. I let them thaw out for around two hours until they were fairly soft and squishy.
When it was time for me to start preparing, I first made the breading mix out of some sweetened shredded coconut, panko breadcrumbs, flour, and salt & pepper. In a separate shallow bowl, I poured out a small amount of milk to act as an adhesive for the breading before I pan-fried the fish.
Next, I made a few cups of couscous with some caramelized onions and garlic, and lots of dried sage to give a nice earthy balance to the zesty onions. Couscous is really easy to cook, only taking a few minutes but comes out really flavorful according to what you add in the pot while it's cooking.
Finally, I also steamed some veggies with red-pepper flakes and garlic until they had the right amount of bite but were not too soggy. This mix of veggies is really summery, with yellow and orange carrots, cauliflower and broccoli florets.
All in all I think this weeknight dinner was super simple to put together and quite nutritious, the only planning required is to thaw out the Mahi Mahi a little while before cooking.
A fluff of the couscous and a squeeze of fresh lime on the fish, and Bon Appetit!!
